The Best Summer Salads

Did you know that the current heatwave we are experiencing in the UK has boosted sales of salads and salad ingredients?

There’s just something about the hot weather that makes cooking seem like a much more unattractive option than throwing something quick, easy, and healthy into a bowl that you can eat anywhere and anytime.

But let’s face it, salads can get boring – if you let them. Not to worry,  there are so many ways to brighten up a salad bowl and make you look forward to your meal; different ingredients, dressings, and of course, variety.

So, this week we thought we would bring you the best summer salad recipes that we can find. To transform your summer bod, with minimal time in the kitchen!


Fruity Salads:

Throwing fruit in a salad seems to be a bit of a trend this summer, so why not give it a go? Maybe a little bit of sweetness will be just what your salad needs. Strawberries seem to be the fruit of choice for most people, and the outcomes look absolutely amazing. If you’re after something a little more refreshing, why not try throwing some watermelon in your salad, like Maria and Josh over at Two Peas and Their Pod? Bulkier Salads:

Sometimes pure vegetables (or fruit) just aren’t going to cut it. Sometimes you just need a bit of bulk in your salad to really fill you up after a long day, or maybe even post-workout.

Lentils are a great place to start if you are looking to boost a salad dish. As Garlic Matters expertly demonstrates, this sun-dried tomato lentil salad looks perfect for anytime you want just a little bit more heft! Take a look at their recipe.

Now don’t get me wrong, every dish that we have shown you so far looks amazing. But some summery occasions just call for a salad that’s a little more fancy. Something you can put down in front of your friends and get a multitude of “oooh’s” and lit-up eyes.
